“Escovitch Fish” Torrance, 2021
My mom made a Jamaican feast for us this evening, and the star of the menu (for me, at least) was an amazing Escovitch Snapper. It was pan-fried whole, and then covered with a yummy, vinegary sauce. So delicious! Of course we had some other Jamaican staples, such as Jerk pork, stew peas, and plantain, but the fish was what I will remember most. 🐟❤🇯🇲
This is my favourite, rivalled only by ackee and saltfish.
