Tomorrow, Mariko is flying up to Indianapolis to watch Koa’s marching band perform in the Bands of America Grand Nationals. Since I’ll be home alone for a couple of nights, she made a big pot of beef curry so that I don’t starve. 😀

Healthy and Light Nabe Dinner

Tonight we enjoyed a simple, healthy nabe dinner. Last night’s meal left me feeling too full, so I was happy to eat lighter tonight.

Even though it was just tofu, greens, and daikon in broth, I felt very satisfied and my stomach also felt good. And I can say that my mindset was also more clear. In fact, I felt so energized that I wanted to go for a run. But since I already went for a long bicycle ride at lunchtime (and Wednesdays are kind of my running rest day) I decided to just take it easy this evening. 😊

Oyakodon 親子丼 Dinner

Tonight I made oyakodon 親子丼 for the kids and I using a recipe from Just One Cookbook and it turned out pretty good! The recipe is for 2 servings, and uses two chicken thighs, but I upped the quantity to three.

However, after I defrosted the thighs, I noticed that it was more like 5 thighs, and not 3, so when I made the dish, the sauce wasn’t as flavorful as it should have been. It still tasted great. But I’ll remember to make more sauce or use the right amount of chicken.
