My first kimchi is a delicious success! I have a feeling we’re gonna eat it all up quickly and I’ll need to make more.

New Batch of Kimchee
Mariko made a big batch of kimchee yesterday. We enjoy eating it, (with yakiniku, nabe, okonomiyaki, etc) but we don’t have it often enough so these jars should last us a good long time, even though I suspect she is giving away a bottle or two to friends.
When Koa saw the kimchee, he said “Oh no”. He really doesn’t like the smell. I asked him what happens if his spouse loves kimchee, and he said, “Divorce!”.
Luckily for him, he will be leaving the house in May to tour with his DCI team so he won’t have to smell kimchee all summer!
Spicy Instant Ramyun
こんばんは。How’s it going?
I’m sure many people who eat instant ramen like to “fancy it up” with extra ingredients from the fridge, right? My go-to is always an egg that I will drop in with two minutes to go on the timer, but for the Korean Ramyun I enjoyed today, I added a healthy amount of kimchee. It’s just so yummy! Now that I think about it, I don’t know why I am not adding nori to my ramen too. We usually have some on-hand in the freezer so there’s no excuse not to.

キムチ鍋 / Kimchi Nabé Dinner
こんばんは。How’s it going?
Tonight, we enjoyed another meal that’s perfect for cool autumn weather: kimchi nabé (キムチ鍋). The ingredients were: tofu, sliced pork, scallion, Chinese cabbage, noodles, enoki mushrooms, shimeji mushrooms, and kimchi. Right now, Koa is on a band trip out of state, so there were only three of us feasting tonight and there was so much food that there were plenty of leftovers. That means it will make a deluxe kimchi udon tomorrow. 🤤
Next time I’d like to try it with oyster as well. It looks amazing:
