Oyakodon 親子丼 Dinner

Tonight I made oyakodon 親子丼 for the kids and I using a recipe from Just One Cookbook and it turned out pretty good! The recipe is for 2 servings, and uses two chicken thighs, but I upped the quantity to three.

However, after I defrosted the thighs, I noticed that it was more like 5 thighs, and not 3, so when I made the dish, the sauce wasn’t as flavorful as it should have been. It still tasted great. But I’ll remember to make more sauce or use the right amount of chicken.

Mariko had to work tonight, but she left some oyakodon half prepped for Koa and I on the stove. All I had to do was to add three mildly beaten eggs to the already cooked chicken in broth and cook to the desired done-ness before putting it over a bowl of rice, which was in the cooker and timed to be finished at 6:30 pm. Yay! By the way, oyakodon is my favorite food. It’s just a simple comfort food, but I just love it. Oyakodon and okonomiyaki are probably tied for the top spot… I could live off of these two dishes for the rest of my life. (and sushi, curry, burgers, pizza, burritos, ramen, Jamaican patties. etc… 😆)

I feel like I must have about a dozen of these posts… a photo of oyakodon and a short paragraph about it being my favorite food. So this time, I’ll just say that we had oyakodon tonight because Mariko was going out with her friend for fondue and this is a super quick prep meal. Basically, she cooked the chicken, broth, and onion in a skillet, then left it for me to finish preparing when the kids came home. That just involved adding five eggs and some green onion to the skillet and cooking it all up. Finally, I served it over rice, put some nori on top, and voila – dinner is served! 😄

Well, I’m back home. It has been a great trip but unfortunately, vacation’s over. As my friend told me, “Even banquets have to end”. 😢

The trip from California to Texas was actually quite good. I made it through security quickly, and while waiting at the gate, the Jetblue gate attendant asked me if I’d like to switch my seat to an “Even More Space” type if I was willing to be in the exit row. I agreed, and the gate attendant assigned me his favorite seat, which is special because the seat in front does not recline! It was so nice. Even though I have short legs, the extra space is welcome. 😀

It was nice to see my family again after over two weeks of being away. And the super-bonus was that I got to enjoy my favorite meal, oyakodon. ❤
